Hi Friends!
Time for another edition of Weekly Eats! Here’s what I’ve been eating for the past couple of weeks:
Eggs per usual.
Egg sandwiches, breakfast dillas, omelets.
Fluids!
Lots of water, coffee, Homemade Gingerale, hot water with lemon & ginger.
Plus an experimental Strawberry Thin Mint Smoothie.
I need to buy some frozen fruit. Winter fruit is just not hacking it for smoothies, flavor-wise.
A few diners out: Chipotle Salad & Pork Tacos with hummus
Sweet & Spicy Almonds
Snickers Brownies with a Peanut Butter Swirl – I modified this recipe.
Deconstructed Nachos.
Fish Chowder- similar to this recipe with extra veggies
Lentil Veggies Mac & Cheese + Chicken
Sweet & Sour Chicken Stirfry
Ugly food that didn’t make it on IG.
Thai Peanut Salmon Burger
Chicken, hummus, guac and cheese on Whole Wheat Flatbread (recipe soon)
Blender Chicken Tortilla Soup
Eggs & Bacon
More homemade almond butter.
Crockpot Bread – still perfecting that one.
Dinner when you need to go to the grocery store
Eggs & Chicken over Corn Cakes (recipe soon)
All three meals:
Oatmeal for breakfast.
Salmon burger for lunch.
Deconstructed nachos for dinner.
Good old fashioned chicken noodle soup for lunch the next day.
Our Valentine’s dinner: Salad, crabcakes, Filet and potatoes for him, salmon and green beans for me!
Plus those brownies and ice cream for dessert!
